KEDGE Wine School is a team who works daily to guarantee its students a path of excellence.
The programme team, composed of 7 people, relies on a team of teacher-researchers to train future managers in the food, wine, spirits, restaurant, hotel and tourism sectors.
David Biraud
Recognized as one of the world’s leading sommeliers, David Biraud has dedicated more than thirty years to the world of wine, fine service, and hospitality excellence.
Originally from Vendée, he began his career in the restaurant industry before specializing in sommellerie at the hospitality school in Talence, near Bordeaux.
He first honed his skills at the prestigious Hôtel de Crillon in Paris, where he rose through the ranks to become Head Sommelier. In 2011, he joined the Mandarin Oriental Paris, alongside Chef Thierry Marx, to lead the wine program at the two-Michelin-starred Sur Mesure restaurant and the Camélia brasserie.
Widely acclaimed for his expertise, David Biraud was named Best Sommelier of France (2002), awarded the title of Meilleur Ouvrier de France in Sommellerie (2004), and earned second place at the 2016 World’s Best Sommelier Competition. These distinctions reflect his precision, dedication, and modern vision of the profession.
In September 2024, he was appointed Director of KEDGE Wine School (Bordeaux and Paris campuses). In this role, he brings his extensive experience to the training of future wine and spirits professionals, promoting an approach that combines technical excellence, international outlook, and sustainable commitment.
Aurore Ruiz
Aurore is Programme Manager on the Paris campus. She manages the development of the Wine and Spirits Management programme on the Paris campus and is in charge of the MSc Wine & Hospitality programme.
Patrice Malka
As Corporate Relations Manager, Patrice works closely with industry professionals to develop partnerships for KEDGE Wine School. He also assists students in their search for internships and work-study programmes.
Elodie Guenro
Elodie is in charge of communication and programmes for the entire KEDGE Wine School. She's also Programme Manager on the Bordeaux campus. She manages the development of the Wine and Spirits Management programme on the Bordeaux campus and is in charge of the MSc Wine & Spirits programme.
Patrice Malka
As Corporate Relations Manager, Patrice works closely with industry professionals to develop partnerships for KEDGE Wine School. He also supports students in their search for internships and work-study placements.
